- 2 large boneless, skinless chicken breasts
- 1/3 c. mayo
- 4 T. parmesan
- 3/4 tsp. poultry seasoning
- 3/4 tsp. garlic powder
- black pepper, to taste
Preheat oven to 375 degrees. Spray a baking dish just large enough to hold chicken.
Cut thick chicken pieces in half, if necessary, to make thinner pieces (or pound with a mallet). Cut shallow slits on top of each piece.
Mix mayo, cheese, and seasonings.
Put chicken pieces in baking dish and spread mayo mixture over top. (Opt.) – sprinkle more parmesan on top.
Bake 35-40 minutes, until chicken is firm and top is browned.
This recipe is adapted from one at kalynskitchen.com; there are many similar recipes out there. Some use Caesar dressing + sour cream instead of mayo. The original recipe calls for 3/4 cup mayo for 4 chicken breasts; I generally halve that for 2 large breasts.
This recipe has been quite successful for me – the chicken turns out very tender and tasty.
