- 1 cup blanched almond flour, room temperature
- 3 T. butter, softened
- 3 T. powdered monkfruit sweetener (I’ve used sugar)
- 1/8 tsp. salt
- 1/2 tsp. vanilla extract
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Add other ingredients to flour and mix with a fork until it comes together in a loose dough.
Measure out heaping teaspoon of dough, roll into small ball. Press the ball down slightly.
Bake 9-10 minutes or until they start to get firm with a little browning on the edges.
These are very tasty and easy to put together. I like that the recipe only makes 12-15 cookies, so you aren’t tempted to overeat too much!
